HANGING WEIGHT OR HOT CARCASS WEIGHT
Hanging weight or hot carcass weight are basically the same thing.
Let me try to explain this to you the best I can. You won’t be disappointed in receiving a side of beef from Pebble Mountain.
Our steers will generally weigh between 1,000 and 1,200 pounds live weight.
Sorry to have to be a little graphic here...after slaughter, the head, guts, hide, organs, lower legs, tail etc. are removed and the live weight is reduced roughly 45% to approximately 660 pounds of what is called hot carcass weight or hanging weight.
So in the case of a live steer weighing 1,200 pounds, the hanging weight will be approximately 660 pounds.
Next 660 pounds is divided by two (2) to get two sides of beef from each steer.
So now a side of beef is approximately 330 pounds.
YOU CAN EXPECT A LOWER TAKE HOME WEIGHT THAN 330 POUNDS. Unless of course you pick up your side of beef and cut it up yourself at home.
Customers pay for hanging weight or hot carcass weight. You will not receive 330 pounds! Here’s what happens: the USDA processing facility will hang the carcass for 7 to 14 days, allowing it to dry and cure. Drying and curing reduces the weight. Then the processor will remove some bones and cut, trim, wrap, and seal your side of beef into individual packages and they will prepare and package ground beef for you.
In this process of drying, curing, cutting, trimming, wrapping, and sealing the processor cuts off and discards excess fat, grizzle, and some bones etc., which creates a great product for you, but also reduces the weight that you paid for. Don’t worry about that reduction in weight, it is the industry standard and you will still have plenty of beef and still at a great deal.
So last year the side of beef we kept for ourselves was 273 pounds bring home. 275 to 300 pounds of beef will fill a stand-alone 14.8 cubic foot freezer.
The processor places the beef in a deep freeze to extreme low temperatures so when you get it, it is freezer-ready.

One of our customer favorites is our delicious Pebble Mountain ground beef. We sell our ground beef in boxes containing 25 pounds of burger. Each box contains 25 individually USDA inspected and sealed one pound packages of ground beef. Our steers are processed at 24 months or less to provide you with tender Pebble Mountain burger for you and your family to enjoy. Our steers are raised outside on pasture, and are finished with grain and corn. Our steers have the freedom to move in and out of a free stall barn and are raised with grass, hay, corn, and grain.
